An Amigo.\u003c\/p\u003e\n\u003ch2\u003eWhy Does the Coffee Taste the Way It Does?\u003c\/h2\u003e\n\u003cp\u003eWe seek flavor profiles that focus on balance, caramel and chocolate notes. These are often washed coffees around 84 points that we roast a touch darker than our other filter coffees. We rotate the coffees seasonally so we can always roast the current harvest of our partners for you.\u003c\/p\u003e\n\u003cp\u003eAfter harvest, the coffee cherries are fermented for 24 hours in steel tanks, then pulped and fermented a second time for 24 hours. The remaining fruit pulp is then removed using a centrifuge in an Eco-Washer. This results in a clean cup with notes of panela, chocolate, creamy caramel and subtle orange.\u003c\/p\u003e\n\u003ch2\u003eHow Do We Roast This Coffee?\u003c\/h2\u003e\n\u003cp\u003eWe roast the coffee in 15kg batches on our 30kg Giesen roaster. The roasting time is 9:30 minutes with a development time of 1 minute and 15 seconds. To develop this roasting profile, we did two things differently than when we roast other washed coffees: First, we increased the batch size by 2.5kg, which extends the roasting time slightly and makes the coffee a bit milder. Our encounter with the people left us with wonderful memories. So we buy the fresh harvest year after year and are consistently impressed by its excellent quality. In 2014, Benjamin became Swiss champion in the Brewers Cup with the Ichamama coffee. In October 2022, Felix competed with it at the Swiss championship and received top scores for the coffee.\u003c\/p\u003e\n\u003ch2\u003eWhy Does This Coffee Taste the Way It Does?\u003c\/h2\u003e\n\u003cp\u003eOne of the interesting side effects of a long-term partnership is that we can consistently identify this coffee's flavor profile among many others. Nevertheless, it is always surprising how different flavor notes appear more or less pronounced from year to year. In 2014, the coffee tasted like rhubarb compote, in 2017 it was like liquid Grether's Pastilles, in 2021 blackberries dominated the aroma, and this year it's more red, acidic berries again. We taste raspberries, rosehip, rhubarb, and light caramel.\u003c\/p\u003e\n\u003ch2\u003eHow Do We Roast This Coffee?\u003c\/h2\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eWe roast the coffee as a 12.5-kg batch in the 30-kg Giesen roaster, with a roasting time of 9 minutes and a development time of 1:10 minutes. We go in at 65% energy, gradually reduce after 5 minutes, and leave the gas open—until the end.
