La rencontre avec les gens nous a laissé un excellent souvenir. C'est pourquoi nous achetons chaque année la nouvelle récolte et sommes enthousiasmés par la qualité toujours convaincante. En 2014, Benjamin a remporté le titre de champion suisse du Brewers Cup avec le café Ichamama. Felix a participé au championnat suisse en octobre 2022 et a reçu les plus hautes notes pour le café.\u003c\/p\u003e\n\u003ch2\u003ePourquoi le café a-t-il ce goût ?\u003c\/h2\u003e\n\u003cp\u003eL'un des effets secondaires intéressants d'un long partenariat est que nous pouvons reconnaître le profil de goût de ce café parmi beaucoup d'autres. Néanmoins, il est toujours surprenant de voir comment différentes notes de goût se manifestent plus ou moins d'année en année. En 2014, le café avait le goût d'une compote de rhubarbe, en 2017 c'était la pastille Grether's liquide, en 2021 les mûres dominaient l'arôme, cette année ce sont plutôt à nouveau les baies rougeâtres et acidulées. Nous goûtons des framboises, de l'églantier, de la rhubarbe et du caramel clair.\u003c\/p\u003e\n\u003ch2\u003eComment torréfions-nous ce café ?\u003c\/h2\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eNous torréfions le café en lot de 12,5 kg dans un Kaffeemacher Giesen de 30 kg, avec un temps de torréfaction de 9 minutes et un temps de développement de 1:10 minutes. Nous commençons à 65 % d'énergie, réduisons progressivement après 5 minutes et gardons le gaz ouvert jusqu'à la fin.
