Il caffè è stato coltivato a Neria, a circa 20 km di distanza, e lavorato presso il Rancho San Felipe, anch'esso a Córdoba. Successivamente è stato spedito dal porto di Veracruz, a poco meno di 100 km di distanza. Quello che sembra tutto logico, in realtà non lo è affatto. Ci sono solo due aziende specializzate nella decaffeinazione ad acqua: Descamex in Messico e Swiss Water in Canada. Il nostro Sueño viene decaffeinato in Messico con il processo Mountain Water Decaf privo di sostanze chimiche. Il processo funziona solo con acqua, pressione e tempo. Abbiamo potuto visitare l'impianto alla fine del 2022 e assaggiare i caffè prima e dopo il processo di decaffeinazione. Il gusto di un decaf è determinato dal chicco utilizzato, dal processo e dalla torrefazione. Il caffè stesso porta un corpo pesante e note cioccolatose, che il processo non modifica. L'acidità rimane citrosa, a cui si aggiunge una nota di sciroppo d'acero che ormai è caratteristica per noi. Durante la torrefazione notiamo quanto sono densi i chicchi - crepitano più forte rispetto agli altri caffè decaffeinati che abbiamo torrefatto finora. Nei primi due minuti forniamo solo il 20% di energia nella torrefazione, facciamo un cosiddetto \u003cem\u003esoak\u003c\/em\u003e. La struttura cellulare del caffè è stata interrotta dal processo di decaffeinazione, quindi entriamo nella torrefazione con meno energia. Successivamente aumentiamo l'energia e a fine torrefazione la riduciamo quasi a zero.
